It will be a wise woman’s perspective, who sees the world through food and who has ideas and thoughts to share, who believe eating and cooking is an important part of life, therefore every thought or occasion comes with something to smooth your soul.

It will be essays, news, thoughts, recommendations and ideas all rooted in my life, and it will often be accompanied with a recipe, because I am almost always hungry.

I am a chaos pilot, who loves to do a lot of things at the same time. I get many ideas, most never materialize, but some do. I have owned 2 companies and written cookbooks, travelled the world and cooked with people.

So, it was time to make some dramatic changes to my life. Restored a big farmhouse, sold my companies, moved from city to countryside, and changed country from Denmark to Italy. I have not left my old life behind; I still work and write about Scandinavia and travel there often, that is a big part of me and my heritage. I just needed to see the world from another perspective, new horizons, a different latitude.

The best thing about growing older is, one has lived through many tides, build up lots of experiences, it all got you to be wise, and in a robust way. I want to enjoy my experiences, write down my thoughts about being a woman in this world and share them: a female perspective without the gatekeeper’s perspective. Write and at the same time investigate, how I navigate being a creator of businesses, writing books, being a boss, friend, mother, sister and wife.

The world is full of gatekeepers, who tell us what we can and cannot do. But I like to spread my wings and my ideas. I think Substack is the right medium, where I can do exactly that.

My Substack will be about the paradoxes of life, how I see the world and how often food is part of it. Cooking and baking are central to my life. I have worked in kitchens for more than 30 years, been a business owner for more 25 years, written 20 or something cookbooks that have been sold around the world, cooked for thousands of people, from royalties to rockstars, lunch for working people for more than 20 years. Throughout, I have been thinking about living, food, nature, business, agriculture, arts, books and politics from many perspectives and from all my different roles in life.

Covid took life and money out of me. I have experienced some form of burn out, and in many ways regretted that I stayed so long in the food business. After I sold my companies, I took some time out to think, created my first vegetable garden and a home in Italy. I read books, wrote in my diary, went for walks, baked a lot of cakes, now I feel I am getting my mojo back, it´s time for a new chapter, time to sit down and write.
